蘇誉 純米 70 ー 無濾過 生 厳守

This is a sake that lets you taste the full spectrum of the rice. Brewed without pasteurization, without dilution, or charcoal filter, its the taste of "sake from the tank". Premium Yamada Nishiki rice from the Tojo and Yokawa regions of Hyogo is lightly polished to only 70%.

The scent is appetizing and inviting, with green notes and wild fermented impressions. The taste is fresh and crisp. The lively acidity gives a cleansing sensation in the mouth. Juicy and fruity flavors, overlapping with cool notes of English licorice.

With its natural alcohol content of 17%, the effect is felt as cleansing in the mouth and throat. Its an incredibly stimulating taste experience, not only on the palate but also in the rest of the body. It is a mood-inducing sake experience, which is one of the charms of the Nama (unpasteurized) Genshu (undiluted) style. The waves of amino acids and umami makes you happy!.

Servering temperature: Pour Junmai 70 chilled, between 10-15 degrees celcius.

Food Pairing: The vibrant, cleansing acidity calls for fatty fish, such as smoked mackerel, grilled salmon, or herring. At the brewery, the intention with Junmai 70 is that it should be poured to Wagyu and Kobe meat. In other words, It is a sake that is made for pairing with rich food. Textures in crisp vegetables like kohrabi cabbage also work well!.
