From deep and rich Yamahai sake to seductive, exotic Junmai Daiginjo. A style that Noguchi san has also perfected during his career. The work to develop Daiginjo also came as a reaction to the 1970's sake market in Japan which had stagnated. You sense the personality behind the depth of flavor and multiple layers. The craftsmanship in this sake is on another level, where the balance gives a pleasure that can be described as meditative, or Zen. Among the many brewing parameters, it is Noguchi san's eminent handling of the Nama-Jyukusei style (unpasteurized vintage), which again dissolves the category system and gives us a completely unique sake.

Tasting notes: Scent of tropical flowers, nectar sweetness, vanilla. Active acidity in the mouth, lush, stone fruit, lavender, long lingering finish.

Food pairing: Drink it as is, or serve with delicate salinity, such as oysters, caviar, scallops or sea urchin. Especially the latter is great with this sake.

Drinking temperature: Can be poured at any temperature. It is a powerful sake that shines through even at cool temperatures, but feel free to try it at room temperature to feel the full flavor spectrum. A wine glass is perfect to let this vintage sake breathe and open up. It is a sake where the aroma is very prominent, so we prefer a wine glass.
