How to store sake?

Always store sake cold, preferably constantly refrigerated. Although 90pct of all sake is pasteurized twice, the fermentation process is still active in the bottle. By cooling sake, you slow down the process significantly.

How long does a bottle of sake stay fresh after opening?

In short, it depends on the sake type .. For pasteurized sake, the estimated lifespan is two months if the bottle is kept refrigerated. The lifespan is shorter for Namazake (un-pasteurized sake), about 4 weeks. There are many minor differences between types of sake. Junmai Daiginjo tends to lose its flavor faster than Junmai, or Junmai Ginjo and Honjozo types sake.
