Producer Tasting: Kojima Sohonten, Yamagata ✹ 26.09.25
We offer a tasting focusing on the fascinating sake brewery, Kojima Sohonten from mountainous Yamagata to the north. It is a house with a history of almost 500 years, which brews superb sake with the region's flavorful and ultra-soft spring water in combination with locally harvested rice. Yamagata is known for its rice in the rest of Japan, so it is with pride and confidence that the brewery produces their three sake brands Toko, Kojimaya and Retsu. The current owner Ken Kojima san, is the 26th generation in the family lineage that founded the brewery back in 1597. We look forward to seeing you and tasting a variety of this fantastic regional sake together in the tasting room.

The tasting is in the company of Jakob Emdal, founder of Manaka and sake sommelier, who has worked professionally with sake in Copenhagen since 2016. Primarily with direct import from Japan's leading sake breweries, as well as supplying sake to Copenhagen's restaurant scene.
Manaka is based in Jægersborggade in Nørrebro.
