This unique Junmai consists of a single batch from 2021. It is a sake that can redefine ones understanding of the Junmai category, with a taste spectrum that contains infinate amounts of nuances, length and umami. A signature sake brewed by the near-mythical Toji, Noguchi Naohiko in Komatsu, Ishikawa. The evolution of Noguchi san's brewing art spans over 70 years. His vision, discipline and creativity are fully sensed in this fantastic Junmai sake. Gohyakumangoku rice from the brewery's own fields, that borders the building, forms the foundation. This type of rice is often used to produce light and crisp sake, but here Noguchi san shows another side of the rice type, by creating a particularly flavorful, full body sake that exudes wild nature.

Tasting notes: Aroma of steamed rice, grassy, ​​forest after rain. In the mouth, notes of vintage champagne, rounded full-bodied flavors and bitter finish.

Food pairing: Camembert, matured blue cheese, creamy pasta, celery, sesame ice cream.

Drinking temperature: Can be poured at any temperature. It is a particularly flavorful sake that shines through even at lower temperatures. But feel free to try it at room temperature to sense the full flavor spectrum. A wine glass is perfect to let this vintage sake breathe. A large flat sake cup of Bizen, or Shigaraki clay will also be an experience with this robust Junmai.
