Sohomare Kiitsu 2016 Vintage, Kimoto Junmai Daiginjo

We offer a very limited number of bottles of the exclusive vintage Kimoto Junmai Daiginjo from 2016. Brewed with Yamada Nishiki rice from the Yokawa region of Hyogo prefecture. Terroir that is among Japan's few rice fields classified as “District A”.
Consisting of a single batch Kimoto Junmai Daiginjo from 2016, this sake is unique in our portfolio. It is both telling of what a Kimoto brewed sake can taste like, with a 35% rice polishing, but it also says something important about what sake can taste like after 9 years of aging. This sake is truly a brewing technical feat by the brewers at Sohomare.
Tasting notes: Contrary to the expectation of a vintage sake, the color is quite clear with just a hint of blue/green hue in the glass. The aroma is mildly fruity with hints of white grapes and koji rice, but there is also an earthy note. The texture melts on the tongue as the flavor spreads. It's a tactile and balanced taste of fruit and tart Kimoto flavors, with some green wood. The quick finish is impressive and a clear aesthetic statement. As the viscosity is high, some lingering earthy umami aroma remains in the mouth.
Food pairing: We recommend pouring Kiitsu on its own, with a glass of spring water on the side. For food, a little salinity would work well. Raw langoustine with a few drops of shoyu, or caviar. Less is more with this sake.
