Junmai-shu (pure rice sake) is a quality indication which implies that only rice, water and koji were used in the production. Junmai also refers to the degree of polishing of the rice, which must be polished to at least 70%, or below. This category is seen as the standard grade of premium sake. The taste will vary depending on the raw materials and brewing technique, but will always be rounded, flavorful and rich in umami.
