Retsu is Kojima Sohonten’s premium label, specifically dedicated to dry sake. It is intended for sake connoisseurs in Yamagata and is therefore rarely seen outside the prefecture. As the name *Retsu* ("winter stream") suggests, this sake possesses a tactile purity and a wealth of cool, crisp notes. It is a sake brewed exclusively for the sophisticated sake enthusiast in Yamagata.

This phantom sake is very rare, even in Japan. It is only through our close relationship with the brewery that we are able offer it. When we tasted it at the brewery, it was unlabeled, a sort of beta version. It made such a strong impression on us that we couldn’t get it out of our minds. At its core, it is a very elegant Junmai Ginjo, with a silky smoothness on the palate. A relatively short aging period of 30 days in a kioke (cedar barrel) gives it just the right, mild cedar nuance. Locally harvested Kameno-O sake rice creates a profile with a full-bodied structure, strength, and a touch of sharpness. It is a sake that expresses both the local terroir and the regional sake style—a flavorful, deep sake on the dry side.

Tasting notes: Mild rounded koji scents, sweetness and a touch of fresh wood. A delicate golden color tone in the glass. The taste is sensed as a wave of vibran nuances. It is an elegant and uplifting profile that brings to mind juicy white grapes. The acidity is complex and different, where notes of cedar are integrated so seamlessly into the acidity that it is difficult to distinguish them as woody. Expect a distinct melting water purity and dryness, balance and a long lingering finish.

Food pairing: We recommend tasting this sake without food the first time to enjoy the complexity as it is. Next, serve this sake with a light fish such as hake or halibut. Sashimi of lean fish is likewise a natural match. Creamy flavors in a Risotto with fresh horse beans would also be an experience with this fantastic sake.

Drinking temperature: The brewery recommends 11 degrees, as this is the temperature of their well all year round. We like to pour Retsu Junma Ginjo Kameno-O Kioke at a slightly warmer temperature of around 16 degrees, or room temperature. This authentic Yamagata sake is best enjoyed in a small white wine glass or wine tumbler.
