The small Hiroshima Kura, Imada Shuzo, is led by brewmaster Miho Imada, who has been head of production at the family brewery since 2001. Fukucho sake is distinguished by working within a local Ginjo tradition, brewing sake with extremely soft spring water. Their sake is rich, tasteful and enticingly fresh. Lightly pasteurized, without the use of a carbon filter, their sake has a very immediate and insistent quality that they are famous for in Hiroshima and the rest of Japan.
