Producer Tasting: Hata shuzo, Shiga ✹ 10.10.25
Hata shuzo produces a sake called Daijiro that we are incredibly impressed with. We have been doing business with the brewery for a little over a year and have built a close relationship with Daijiro sake and with Daijiro san, the master brewer. It is a small brewery with a team of only three brewers who grow their own rice, use older brewing methods, make washi paper for their sake labels on the bottles, out of plant fibers from their rice harvest. But it is the taste of their sake that stops time for us. True to the Shiga region's preference for flavorful sake, tea and food, Hata shuzo brews a full-bodied, rich and nourishing sake. We will soon receive our next shipment of sake from Japan and with it a group of exciting new Daijiro sake. Look forward to an expansive tasting with a varied program that cannot be found outside of Shiga prefecture. We talk about the brewery's historical background, their brewing art, their aesthetics, the culture of the Shiga region, etc.

The tasting is in the company of Jakob Emdal, founder of Manaka and sake sommelier, who has worked professionally with sake in Copenhagen since 2016. Primarily with direct import from Japan's leading sake breweries, as well as supplying sake to Copenhagen's restaurant scene.
Manaka is based in Jægersborggade in Nørrebro.
If you have a restaurant booking after the tasting, please mention it before the tasting begins so we can time it. The tasting can easily go over time.
