An absolutely wonderful Kimoto “Muroka Nama Genshu” brewed by Toji, Daijiro Hata in the Shiga region. With evolving, complex flavors and floral aroma, this sake, in its entirety, seems to represent its own ecosystem. Hata Shuzo is an exceptional small brewery. Looking at their lineup, they offer all Daijiro sake with or without pasteurization. Uniquely, you can choose for yourself. It's a sake lover's fantasy come true. Without pasteurization, you get a completely different experience of the rice taste and aroma. Typically, It's a very active flavor with a slight sizzle and a strong fruity aroma.

The aroma of this namazake has a warming floral sweetness. There are also fermented impressions of koji and umami in the scent. The color in the glass has a delicate, golden green hue, indicative of muroka, the omission of a carbon filter that would remove the color of the sake.

The taste is like a party in the mouth. A huge variety of flavors overlap, ranging from delicate rice sweetness, juicy acidity to creamy finish. It's an uplifting sake that enduces a kind of euphoria. We've been experiencing it at sake tastings ever since it came into stock. You get carried away, when tasting both refined and powerful flavors and aromas at the same time. Locally grown Wataribune sake rice contributes to the delicious creamy aftertaste.
