Dakuryu Junmai Daiginjo Usu Nigori

This Premium Nigori, Junmai Daiginjo from Tatenokawa is a far cry from the popular, sweet Nigori sake that widely circulates outside Japan. A coarse filter was used after the pressing (Shibori) to allow ultra fine rice sediment to pass through, into the bottle. The bottling process happens very quickly to insure that the sake retains the vibrant qualities of "sake from the tank". This includes a very pleasant light spritz of residual carbonation. On the palate, a quick burst of grapefruit-like acidity is followed by small, clear notes of Vermouth. This effervescent Usu Nigori with its multilayered fruit acidity and big splashes of amino acids is by all accounts a readymade cocktail in the glass !.
Served chilled as an aperitif, or with creamy desserts such as rich Goma ice cream.
Refrigerate at all times, since this sake is Nama ((unpasteurized)).
