    Fresh and crisp Junmai sake from the essential Hiroshima brewery Imada Shuzo. This is the brewery's answer to a standard Junmai sake that is balanced in its taste and flexible with food pairing. In a new developement in the production of this sake, master brewer Miho Imada is now using the advanced rice polishing method “Shingin” that improves the fermentation ability of the rice. This delicious Junmai Karakuchi will satisfy sake novices as well as seasoned Fukucho fans.

    Tasting notes: The aroma from the glass gives impressions of lime, citrus, young melon, and sea breeze. The taste is full-bodied and comfortable. Rounded fruity notes of white grapes and a little spice. Clear and clean finish with a tart note reminiscent of lime peel.

    Food pairing: Fukucho Karakuchi Junmai is ideal for pairing with fish and shellfish. Scallop or langoustine sashimi is an obvious choice. A juicy piece of grilled monkfish with butter ponzu would also go well. A simpler serving could be summer peas in their pods, or small cherry tomatoes on the vine.

    Drinking temperature: We serve this sake a few degrees below room temperature, 16-18 degrees. In the winter months, this sake can also be warmed to around 50 degrees, which brings its complexity to life. The flavors become even more succulent, the umami is enhanced, and the aroma becomes more food-like. Think dashi and steamed rice.
