After a quick infusion of 30 seconds, at 80 degrees, the scent of the leaves becomes richer and deeper, reminiscent of steamed green peppers. The liquid, on the other hand, is fine and elegant, it brings to mind white grapes and gooseberries. Lightly creamy and balanced with a nice, long aftertaste. A tea that is refreshing, but also very active in the body. In the mouth you get a long wave of fine flavors, lead by sakuramochi.\u0026nbsp;It is an elegant liquid, slightly acidic \u003cspan data-mce-fragment=\"1\"\u003ewith\u003c\/span\u003e\u0026nbsp;a nice mineral purity. Green avocado-like impressions, overlaps\u0026nbsp;with\u0026nbsp;sourdough elements in beautiful balance. After the first few cups, the tea is felt in the head. As with our other Tamaryokoucha from Oita, this is a tea that is very active in the body. With the second infusion, the liquid becomes thicker and more juicy. It is especially the feeling of red berries, perhaps currants that dominates the taste, long and complex. You can also heat this sake to 40 degrees and enjoy it from ceramic cups, which would be in line with how autumn sake is served in Japan.\u003c\/p\u003e\n\u003cp\u003eUnlike other Kimoto sake from Sohomare (assemblage), this release consists of a single batch Kimoto sake brewed with Yamada Nishiki sake rice from the Yokawa area in Hyogo Prefecture, one of the highest-ranked cultivation areas in the country. As with other Kimoto sake from Sohomare, the flavor complexity is difficult to define. It is an incredibly well-balanced sake that feels uplifting on the palate. Kimoto Junmai Omachi adds yet another exciting nuance to the experience of the superb sake output from Mitobe Shuzo, from the mountainous region of Yamagata.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTasting notes\u003c\/strong\u003e: The aroma is fresh, evoking notes of mint and fresh cheese. On the palate, there is a lively, uplifting acidity that varies across a myriad of subtle nuances. The characteristic sweetness of Omachi rice blends beautifully with the energetic Kimoto acidity. This delicious lactic acidity is very vibrant and is almost reminiscent of young mandarins.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eServing\u003c\/strong\u003e: Chilled, a few degrees below room temperature—but definitely not straight from the refrigerator. Indeed, the closer it comes to room temperature, the broader the flavor spectrum, the greater the aroma, umami, and pronounced rice sweetness—not to mention a creamy nuance. We recommend serving it at room temperature in an unglazed ceramic sake cup—preferably a larger Bizen or Shigaraki sake cup. If you want more intensity and umami, you’ll enjoy drinking Kimoto Junmai Omachi as Kanzake.
